Teochew Porridge

There’s a reason porridge exists in nearly every food culture on earth. It comforts, restores, and somehow always tastes like home. And back in Kuala Lumpur, whenever Charlie's kids were feeling under the weather, this Teochew-style chicken porridge is what he would make to perk them up. A classic Asian recipe that keeps things beautifully simple: soft rice, tender chicken, ginger, and spring onions brought together into a light, soothing bowl. Finished with a few drops of CP’s Double-Infused Saltfish Padda oil, it transforms from humble to quietly addictive. (remember: start with a few drops, then add more if the bowl wants it. The porridge itself should stay clean and soothing, so the Padda oil lands as that final savoury lift.)

Ingredients

  • 100g jasmine rice, about ½ cup, rinsed well
  • 900ml–1 litre water or light chicken stock. Use 900ml for a thicker porridge, 1 litre for a looser, silkier bowl.
  • 250–300g chicken thigh or breast, thinly sliced Thigh gives more tenderness, breast keeps it lighter.
  • 20–25g ginger, cut into fine strips. About 1 thumb-sized piece.
  • 2 stalks spring onion, finely sliced
  • ½ tsp salt, then adjust gently at the end
  • ¼ tsp white pepper, or to taste
  • 1–2 tsp light soy sauce, optional
  • ½–1 tsp CP’s Double-Infused Saltfish Padda oil per bowl, for finishing

Steps

  • Rinse the rice well until the water runs mostly clear
  • Add rice and water or stock to a pot and bring to a boil
  • Lower heat and simmer gently for 35–45 minutes, stirring occasionally, until the rice softens and lightly breaks apart while still remaining loose and silky
  • Add sliced ginger and chicken, stirring gently so the chicken separates into tender pieces
  • Cook for another 5–7 minutes until the chicken is fully cooked
  • Season lightly with salt, white pepper, and a small splash of soy sauce if desired
  • Ladle the porridge into bowls and top with sliced spring onions
  • Finish with just a few drops of CP’s Double-Infused Saltfish Padda oil over the surface for a final layer of savoury depth and aroma
  • Enjoy hot, slowly, preferably with absolute silence for the first few bites.
