Umami City Noodles

Some of the best food in the world is made in ten minutes with whatever's in the kitchen. Umami City Noodles is that dish. Noodles, an egg, a spring onion, and a spoonful of CP's Spiced Fish Pickles. And suddenly your bowl has more depth, heat, and soul than anything you'd order in. This is weeknight cooking at its most convenient.

Ingredients

  • 200–240g fresh noodles or 140–160g dried noodles
  • 2 eggs
  • 2 stalks spring onion white parts sliced finely, green parts sliced a little thicker
  • 2 tbsp Saltfish Padda
  • 1–2 tsp Double-Infused Padda oil, for drizzling over the eggs
  • 1–2 tsp thin soy sauce, optional
  • ½ tsp sesame oil, optional
  • A small pinch of salt for the noodle water, but go easy

Steps

  • Slice the spring onions and set aside, the white and green parts separated
  • Cook the noodles. If using fresh noodles just heat in boiling salted water for 30 seconds
  • Place cooked and drained noodles in a a bowl, spoon CP's Spiced Fish Pickles and mix well. For one serving of noodles, one tablespoon of CP will do (TIP: you can also add a splash of thin soy sauce and a drop or two of sesame oil to add even more layers of umami)
  • Add spring onions whites and mix well into the noodles
  • In heated pan, fry the egg to your liking, then place on top of noodles
  • Drizzle some CP oil on egg
  • Sprinkle the spring onion green bits on the egg
  • Enjoy!
